So for this beautiful cut of meat I used the trusty Masterbuilt 30inch electric smoker. I used an Apple Wood.
-Apple wood chips
-3lbs pork loin (trimmed)
-1 Apples Ale beer
-Start smoker and set to 235 degrees
-Rinse meat and pat dry
-Coat meat with Olive oil
-Apply dry rub generously to meat
-Let sit for 20 mins
Once meat reaches an internal temperature of 165 degrees remove meat and let sit for 15 minutes.
Cut with sharp knife and serve.
